Kyoto is the place of tea culture started by bringing first tea tree from China in 8th century. Sencha was invented in Kyoto by Soen Nagatani in 1738.
Brewing instructions (for one person)
1st brew
3 g tea / 120 ml water (70°C) / Extraction time 40 sec
2nd brew
120 ml water (80°C) / Extraction time 30 sec
3rd and subsequent brew
as desired
For the first brew, use normal temperature and extraction time. For the second brew, use a higher temperature and shorter extraction time.
In both cases, make sure to pour every last drop into the cup (that's where the flavour is concentrated).
*Water tastes better once you boiled up first.
