Brown sugar is sugar made by boiling down squeezed juice from sugar cane.  In the production, pure brown sugar does not go through purification process. That is why final product color is blackish-brown.  Not only colour, many kinds of nutrients remain like calcium, iron and zinc in it.  Sugar content and calories are low in brown sugar compared with refined white sugar.  There are moderate bitter and astringent taste because of the ingredients other than sugar.  This complex ingredients make brown sugar produce the scent of caramel-like pleasant aroma.
